CHICKEN AND YELLOW RICE | |
1 fryer, cut up 2 sm. onions, diced 1 bell pepper, diced 1/4 c. olive oil 4 c. Uncle Bens converted rice 8 c. water 2 pkgs. Vigo seasoning mix for yellow rice 1 can cream of mushroom soup 1 can peas (optional) Heat olive oil in skillet. Add chicken pieces and cook until lightly browned on each side. Remove chicken from pan and place in prepared large casserole or baking pan. Add onions and bell pepper to skillet. Saute. Pour over chicken. Add other ingredients, reserving peas. Bake at 350 degrees for 1 hour or until rice is cooked. About 15 minutes before cooking is done, pour peas over casserole and return to oven. |
