MEXICAN CORN BREAD 
3 c. corn meal mix
2 1/2 c. milk
1/2 c. oil
3 eggs, beaten
1 onion, chopped
2 tbsp. sugar
1 c. corn
1/4-1/2 c. peppers
1/2 c. grated cheese
1/4 c. chopped pimentos

Mix and bake at 400 degrees for 45 minutes. Makes a big casserole or 2 skillets (1 big and 1 little).
