OLD FASHIONED RICE PUDDING 
2/3 c. instant rice
3 c. milk
2 eggs
2/3 c. sugar
3/4 tsp. salt
1 tsp. vanilla
1 c. raisins

Bring to a boil instant rice and milk. Mix together 2 slightly beaten eggs, sugar, salt and vanilla. Add hot rice mixture slowly to egg mixture. Add raisins and pour into casserole.

Place casserole in pan of hot water (about 1 inch of water) and bake about 45 minutes in 375 degree oven. Stir several times during first 20 minutes. When done an inserted silver knife should come out clean (8 portions).
