CHILE RELLENO 
1 lb. grated Cheddar cheese
1 lb. grated Monterey Jack cheese
2 lg. cans whole Ortega chiles
1 regular size can green chile salsa
4 eggs
2 tbsp. flour
1 can evaporated milk

Open chiles and slice into chunks. Layer 1 can of chiles on bottom of 9x12 inch baking dish, spray with Pam. Sprinkle half of Cheddar and Jack cheese over chiles. Repeat with a second layer if chiles and cheese.

Mix flour, eggs, and milk in blender. Pour the liquid over the cheese and chiles. Can be prepared ahead to this point. Bake at 350 degrees for 45 minutes to 1 hour until edges start to brown. Remove from oven and pour salsa over top. Place back in oven for about 15 minutes. let set 10-15 minutes. Cut into squares and serve.
