MEXICAN MEAT PIE
1 (13 1/4 oz.) pkg. hot roll mix
1 lb. ground beef
1 (8 oz.) can tomatoes
1/2 c. bottled hot or mild taco sauce
3 tbsp. salad oil
1 lg. onion, sliced
1 med. red pepper, sliced
1 sm. green pepper, sliced
Salt

1. Preheat oven to 425 degrees. Grease 12 inch pizza pan. Prepare hot roll mix as label directs but use 1 cup water and omit egg. Do not let dough rise. Pat dough 1/8 inch thick onto bottom and up sides of pizza pan to make a stand up edge. Bake 20 minutes or until crust is browned and crisp.

2. Meanwhile, in 10 inch skillet over high heat, cook ground beef until juices evaporate and meat is well browned. Stir in tomatoes with their liquid, taco sauce and 1/2 teaspoon salt. Cook 10 minutes to blend flavors.

3. While meat is browning, in 2 quart saucepan over medium heat, in hot salad oil, cook onion, red pepper and 1/4 teaspoon salt until tender, stirring occasionally.

4. To serve, remove pizza crust form oven, spread ground beef mixture on top of crust. Sprinkle with green pepper. Pile onion mixture on center of pizza. Makes 4 servings. 840 calories each serving.
