FRESH BLUEBERRY MUFFINS 
2 c. flour
3 tbsp. brown sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg
1/4 butter, melted
(plus extra to grease muffin tins)
1 c. milk
1 c. fresh blueberries
2 tbsp. sugar

In large bowl, mix together flour, brown sugar, baking powder and salt. In small bowl, beat together egg, melted butter and milk. Add all at once to flour mixture and stir until dry ingredients are moistened. Fold in blueberries.

Spoon into greased muffin tins and sprinkle sugar over the top. Bake in 425 degree oven for 20-25 minutes or until toothpick inserted in center comes out clean. Makes 1 dozen muffins.
