BANANA PANCAKES 
1 c. all purpose flour
2 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1 c. milk
2 tbsp. melted butter
2 ripe mashed bananas

Combine dry ingredients in large bowl; mix well. Add milk. Beat in eggs, then add butter and bananas; stir well. Heat a griddle over medium heat. Pour batter onto hot griddle. As soon as pancake bubbles, turn cake over. Should be medium brown.

Whole Wheat Pancakes: Use 1/3 cup whole wheat flour, 2/3 cup white flour instead of 1 cup white flour.
