BANANA-BRAN MUFFINS 
3/4 c. buttermilk
1/4 c. vegetable oil
2 egg whites
2 tbsp. honey
3 very ripe bananas, mashed
1 1/2 c. whole wheat flour
3 oz. uncooked bran
2/3 c. instant nonfat milk powder
1 tsp. baking soda
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Non-stick spray (Pam)

Mix buttermilk, oil, egg whites, and honey. In large bowl, combine flour, bran, milk powder, baking soda, cinnamon and nutmeg. Add buttermilk mixture. Stir in mashed bananas. Spray muffin pan cups. Fill 3/4 full. Put water in any empty cups to prevent discoloring. Preheat oven to 350 degrees. Bake 25 minutes, then let muffins stand 5 minutes.
