ROSY APPLE SNOW 
2/3 c. quick brown rice
1/2 c. red cinnamon candy
2 c. raw apples, shredded
1 c. whipped cream
1 c. water
1/4 tsp. salt
2 tbsp. sugar
2 tbsp. lemon juice

Heat water to boiling, add salt, stir in rice, cover and cook over very low heat for 15 minutes. Add candy, cover and let stand 10 minutes. Stir lightly. Chill. Shortly before serving, shred apples and mix with lemon juice. Whip cream with sugar until stiff. Fold in rice and apples. Spoon into serving dishes and chill until served. Makes 6 servings.
