CREAM OF BROCCOLI SOUP 
1 oz. butter
1 chopped potato
1 chopped onion
1 1/2 fresh broccoli
1 garlic clove, crushed
2 pts. vegetable stock
Salt & pepper to taste
1/4 pt. milk
Chopped chives or parsley to garnish

Melt the butter in a large saucepan. Add the potato, onion and broccoli and garlic. Stir to cover with the butter then add the boiling stock and simmer until the vegetables are just tender (about 15 minutes). Season with salt and pepper. Blend this mixture in a food processor or blender until smooth.

Add the milk and carefully reheat. Serve sprinkled with chives or parsley. NOTE: If a thinner soup is desired add more milk. Serves 4 to 6.
