ORANGE OATMEAL MUFFINS 
2 c. flour
3/4 c. sugar
4 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. rolled oats
1 orange, rind and sections
2 eggs, beaten
2 tbsp. butter, melted
1 c. water

Stir together flour, sugar, baking powder, soda, salt, and oatmeal. Set aside. Mix one tablespoon additional sugar with grated orange rind and diced sections. Set aside. Combine beaten eggs with butter, orange mixture and water. Combine with dry ingredients. Stir to blend. Pour into greased muffin tins. Bake at 350 degrees for 30 minutes.
