CATFISH AU GRATIN 
1/2 c. onion, diced
1/4 c. butter
1 sm. box American or Velveeta cheese
4 whole catfish
1/4 c. milk

Cook onion in butter until slightly browned. Mix in American cheese until all is melted. Take off fire and add milk to make creamy sauce.

Put catfish in oven on broil. Cook until done on one side, turn them and cook other side. Remove catfish from oven and pour cheese sauce over top. Delicious! Serves 4.
