CHEESE PUFF 
1 c. milk
1/4 c. butter (sm. pieces)
1 c. sifted flour
1/8 tsp. pepper
Dash of salt
4 eggs
1 tsp. Dijon mustard
1 c. grated Swiss cheese
1/2 tsp. dry mustard

Grease OUTSIDE of 8 inch round cake pan and place on a greased cookie sheet. In a 2 quart saucepan heat milk and butter to boiling. Remove from heat and add flour, salt and pepper all at once. Mix, return to heat and keep stirring until mixture comes away from the side of the pan. Remove from heat. Working quickly, add eggs, 1 at a time, mixing well. Add cheese and mustards, mixing until well blended.

Form dough into a circle around OUTSIDE of cake pan and refrigerate for a few hours or overnight. Bake 30 to 35 minutes, until puffed and brown, at 400 degrees. Remove from oven, remove cake pan and brush with topping (below). Let cool. Serve with grapes or other fruit heaped in the middle of the circle.

TOPPING:

2 1/2 tbsp. mayonnaise
1 tsp. paprika
2 tbsp. Parmesan cheese

Mix together.
