ZUCCHINI PIE 
4 eggs
3 c. zucchini in small cubes (with skin)
1/2 c. oil
1 c. Bisquick
1/4 c. grated Cheddar cheese
1/4 c. Parmesan cheese
1 large onion, diced
1 tbsp. melted butter
1/4 tsp. each oregano and parsley
1 clove garlic, diced small
salt and pepper to taste

Mix all ingredients in one bowl. Butter 9-inch glass dish.

Bake at 350°F for 40 minutes or until golden brown. Double recipe for 9 x 13 pan.
