OATMEAL SCOTCHIES 
1 1/4 c. all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. butter, softened (2 sticks)
3/4 c. sugar
3/4 c. firmly packed brown sugar
2 eggs
1 tsp. vanilla or grated peel of 1 orange
3 c. quick or old fashioned oats, uncooked
1 (12 oz.) pkg. Nestle Toll House flavored butterscotch morsels

Preheat oven to 375 degrees. In small bowl, combine flour, baking soda, salt, and cinnamon; set aside. In large mixer bowl, beat butter, sugar, eggs, brown sugar, and vanilla or orange peel until creamy. Gradually beat in flour mixture. Stir in oats and butterscotch. Drop by tablespoonfuls onto ungreased cookie sheets. Bake 7-8 minutes for chewier cookies; 9-10 minutes for crispier cookies. Makes about 4 dozen.
