CHEESE STRATA WITH ZUCCHINI 
1 sm. onion
1 zucchini
3 tbsp. butter
1/4 tsp. marjoram
1/4 tsp. oregano
8 slices firm white bread
1/2 lb. Swiss cheese
4 eggs
2 c. milk
1 tsp. salt
1/2 tsp. pepper

Heat oven to 375 degrees. Butter a baking dish. Cut the onion and zucchini into thin slices. Melt 1 tablespoon of butter in a frying pan. Add the onion and cook over medium heat until softened about 2 minutes. Add the zucchini, marjoram and oregano and cook until the vegetables are soft; brown 6 to 8 minutes. Cut bread into 1/2 inch cubes. Grate the cheese. Beat together the eggs, milk, salt and pepper.

Layer the bread, vegetables and cheese into the pan and pour the milk mixture over all. Dot the top with 2 tablespoons butter. Bake until browned, about 30 minutes. Zucchini can be substituted with your favorite vegetable. Preparation time: 15 minutes work, 45 minutes total. Serves: 4.
