APRICOT RICE SALAD 
1/2 c. rice
3 c. water
1 can mandarin oranges
1 c. whipped cream
1 sm. can crushed pineapple
1/2 c. sugar
1 (3 oz.) pkg. apricot Jello

Cook rice in water about 25 minutes. Dissolve Jello in 1/2 cup of the rice water. Combine everything except whipped cream, when partially set, fold in whipped cream.
