COLD COUSCOUS SALAD 
Here's a delicious and nutritious summer meal for family and friends.

1 c. diced, cooked chicken (optional)
2 c. cooked couscous
2 tomatoes, diced
1 cucumber, diced
1 red onion, chopped
1 1/2 c. chick peas
1 c. chopped parsley
2 tbsp. chopped mint
1/4 c. olive oil
1/2 c. lemon juice
2 tbsp. Dijon mustard
1 tsp. garlic, chopped
1 tsp. pepper
1/2 tsp. salt

Mix, chill and serve. Serve 6 to 8.
