ZIPPY CHEESE OMELETTE 
1/2 c. salsa, or Picante sauce
1 c. shredded Monterey Jack cheese
1 (4 oz.) pkg. shredded cheddar cheese
6 eggs
8 oz. sour cream
Tomato wedges; optional

Pour the salsa into the bottom of a 10 inch quiche dish or pie plate. Sprinkle cheeses over sauce. In a blender place eggs; cover and blend until smooth. Add sour cream; cover and blend until smooth. Pour the egg mixture over cheese. Bake, uncovered, at 350 degrees for 30-40 minutes or until a knife inserted in center comes out clean. Drizzle with additional salsa.
