RICE AND TUNA PIE 
2 c. rice, cooked
3 tbsp. onions, chopped
3 tbsp. butter
1/4 tsp. parsley flakes
1 egg, slightly beaten
1 (9 oz.) can tuna, drained
3 eggs, beaten
4 oz. (1 c.) cheese, shredded (Swiss, sharp or Mozzarella)
1 c. milk
1/2 tsp. salt
4 tbsp. onions, chopped
1/2 tsp. parsley

For rice shell, combine first 5 ingredients; press onto bottom and sides of lightly buttered 10 inch pie plate. Sprinkle tuna evenly over rice shell. Combine remaining ingredients except parsley and paprika. Pour over tuna. Sprinkle parsley and paprika over top. Bake at 350 degrees for 50 to 55 minutes, or until knife inserted off center comes out clean. Yields 6 servings.
