PINEAPPLE CHICKEN 
1 (3 lb.) chicken
1 (8 oz.) can crushed pineapple
2 tsp. dried minced onion
2 tbsp. orange juice
2 tsp. cornstarch
Dash ground ginger, if desired

Cut up chicken and remove skin. Mix together undrained pineapple, onion, and 1/2-teaspoon salt; pour over chicken in a baking dish. Bake at 375 degrees 50-60 minutes, uncovered.

Baste with pineapple mixture. Place chicken on platter and skim fat from pan. Mix together 1/2 cup pan juices, orange juice, cornstarch, and a dash of ground ginger, if desired. Cook and stir until thickened. Serve over chicken. Serves 6.
