PINEAPPLE UPSIDE DOWN CAKE 
1/4 lb. butter
1 c. brown sugar
1 (8 1/4 oz.) can sliced pineapple in heavy syrup
Maraschino cherries to decorate

Melt butter in 9 inch iron skillet, stir in brown sugar and place pineapple slices and cherries on top.

3 eggs
1 c. sugar
Syrup from pineapple slices
1 c. flour
1 tsp. baking powder

Beat egg yolks, add sugar, pineapple juice, flour sifted with baking powder. Fold in beaten egg whites. Pour over first mixture and bake 45 minutes at 325 degrees. When cake is done place cake plate on top of skillet and invert.
