CARROT CAKE | |
3 c. flour 2 1/2 c. sugar 2 tsp. baking powder 1 tsp. baking soda 4 eggs 3 tsp. cinnamon 1 c. chopped walnuts 2 (7 1/2 oz.) jar carrot baby food 1 1/4 c. oil 3 grated carrots 1 c. raisins Mix dry ingredients. Add other ingredients. Hand mix or beat at medium speed. Blend in raisins and nuts. Place in well greased and floured tube pan. Bake in preheated 350 degree oven for 1 hour and 15-20 minutes. Let cool for 30 minutes. Remove form pan. CREAM CHEESE FROSTING: 6 oz. cream cheese 3-4 c. 10x sugar 3 tbsp. butter 1 tbsp. vanilla Blend butter, softened cream cheese, gradually add sugar. Beat until creamy and smooth. Stir in vanilla. Frost cake. |
