PINEAPPLE DELIGHT 
3/4 c. shortening
1/4 lb. butter
1/2 c. confectionary sugar
1 tsp. vanilla
2 1/4 c. flour
1/2 tsp. salt
1/2 tsp. baking powder

Combine Shortening and butter. Add confectionary sugar and vanilla. Blend til fluffy. Add flour, salt and baking powder. Mix together until smooth. Press batter into a 9 x 12 inch greased pan.

Bake at 350°F for 18 - 20 minutes, until golden in color. Cool well.

Topping:

8 oz. cream cheese
1/2 c. jam
1/2 pt. heavy cream
5 tsp. powdered sugar
1 tsp. vanilla
1 can crushed pineapple, drained

Combine cream cheese and jam and blend well. Spread mixture onto crust.

Whip cream, adding powdered sugar and vanilla. Fold in pineapple and spread on top of cream cheese mixture.
