BENCHILADAS 
12 tortillas (corn or flour)
16 oz. can refried beans
8 oz. Monterey Jack cheese
8 oz. Cheddar cheese
19 oz. enchilada sauce
2 1/4 oz. sliced olives
16 oz. sour cream
5 green onions
Jar of salsa

Fry the tortillas for a minute or 2 until warm and soft. Spread beans and a dollop of sour cream on a tortilla. Grate Jack and Cheddar cheeses and sprinkle small amount of each on sour cream. Cut up green onions and sprinkle onions and olives over cheese. Spoon salsa over it all and roll. Place in a 9 x 13 inch pan and pour enchilada sauce over pan when full of rolled enchiladas. Spoon out salsa over the enchilada sauce. Bake in oven at 350 degrees for 45 minutes until tops of tortillas are a little brown.

Sour cream may be optional or substituted with cream cheese.
