MERINGUES 
Sometimes I add a drop of food coloring to make these look like the ones I used to buy at the local bakery!

4 egg whites
1 tsp. vanilla
1 c. sugar

Beat egg whites until stiff, then slowly add 1 rounded tablespoon of sugar at a time. Beat thoroughly after each addition. Add vanilla and beat again. Spoon out onto waxed paper placed on a tray and bake at 250°F for about 1 hour. These are neither hard nor gummy.
