4 1/4-4 3/4 c. all-purpose flour 1 pkg. active dry yeast 1 1/2 c. warm water 1/4 c. sugar Combine 2 cups of flour and the yeast. Add warm water, 3 tablespoons of sugar and 1 teaspoon salt. Beat with electric mixer on low for 30 seconds, scraping bowl constantly. Beat on high speed and using a spoon, stir in as much remaining flour as possible. Turn out onto lightly floured surface, knead in enough flour to make a moderately stiff dough, about 6-8 minutes. Cover, let rest 10 minutes. Divide dough into 12 portions. Shape each portion into a smooth ball. Punch a hole in the center of each ball. Pull dough gently to make a 2 inch hole. Place on greased baking sheet. Cover and let rise 20 minutes. Broil raised bagels 5 inches from heat 3-4 minutes, turning once. Bring 6 cups water to boil. Add 1 tablespoon sugar. Reduce heat, simmer bagels, 4-5 at a time, 7 minutes. Place drained bagels on greased cookie sheet. Bake at 375 degrees for 25-30 minutes. |
