SPINACH CASSEROLE 
1 (10 oz.) pkg. frozen chopped spinach
2 eggs, beaten
2 tbsp. milk
1/4 c. cottage cheese
1/4 c. sharp Cheddar cheese
1/8 tsp. salt
1 c. herb seasoned stuffing mix

Pierce package of spinach several times. Place on paper plate. Microwave at High for 3 minutes until spinach separates.

Combine egg, milk, cottage cheese, Cheddar cheese, salt, stuffing mix and spinach. Spread mixture in greased 1 to 1 1/2 quart glass casserole. Microwave at high 5 to 7 minutes. Let stand 2-3 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
