SALMON BURGERS 
1 (15 1/2 oz.) can salmon
3/4 c. oatmeal
1/2 c. onion, finely chopped
1 egg, slightly beaten
2 tbsp. parsley, minced
2 tbsp. lemon juice
1 tbsp. Worcestershire sauce

Drain and flake salmon. Combine with remaining ingredients and mix well. Shape into 4 patties. Pan-fry on both sides in hot oil until golden brown. Serve in buns with lettuce and tomato slices.

Tasty and crispy on the outside. Like the use of oatmeal instead of flour to add some fiber. Used olive oil for frying since it is also nutritious and will mostly be absorbed into the burger while frying.
