TABOLI 
1 c. taboli wheat
1 cucumber
2 lg. tomatoes
4 or 5 green onions
1 lg. green pepper
10-12 fresh sprigs parsley
2 tbsp. fresh mint leaves
1 tbsp. salt
1 tsp. black pepper
1/2 c. lemon juice
1/4 c. olive oil or salad oil

Taboli wheat can be found in the produce section at the grocery stores. Soak the wheat in a bowl covered with water for at least 30 minutes. Finely chop the cucumber, tomatoes, green onions and green pepper; combine in bowl. Chop the parsley and mint fine and add to bowl. Add remaining ingredients and stir. Drain wheat thoroughly and add to bowl. Chill the taboli for several hours and serve.
