BACON AND EGG MUFFINS | |
2 c. flour 2 tbsp. sugar 1/2 tsp. salt 1 egg, beaten 1/4 c. oil 4 slices bacon, crisp, drained and crumbled 4 tbsp. baking powder 1 tsp. dry mustard 3/4 c. shredded sharp cheese 3/4 c. milk 2 hard boiled eggs, chopped Mix thoroughly flour, sugar, baking powder, dry mustard and salt. Stir in cheese. Make a well in center. Combine egg, milk and oil. Add to dry ingredients, stirring just until moist. Fill well greased muffin pans 1/3 full. Top with chopped eggs and crumbled bacon. Bake at 400 degrees for 25 minutes. |
