RICE WITH CHEESE AND PEAS 
1 c. rice
1/2 tsp. salt
1 can green peas
2 tsp. butter
2 tsp. flour
1/2 tsp. pepper
1 c. milk
1/2 c. cheese, grated
1/2 tsp. mustard
2 c. water

Combine 2 cups water with salt and rice; let boil for 20 minutes. Let rice stand for 10 minutes then add peas. Prepare cheese cream as follows: Place butter in small pan over low fire and melt.. Add flour, salt and pepper, stirring to make paste. Add milk and stir for 2 minutes; add cheese and mustard. Mix well until cheese is melted. Pour over top of rice mixture and serve.
