SWEET POTATO SOUFFLE | |
3 c. cooked & mashed sweet potatoes 1/2 c. sugar 1/2 c. brown sugar 2 eggs 1 tsp. vanilla 1/2 tsp. ginger 1/2 tsp. cinnamon 1/2 c. milk 1/2 stick butter Combine all ingredients in large mixing bowl. Beat until thoroughly mixed. Pour into buttered baking dish. Heat until hot in microwave (5-8 minutes). Top with topping. TOPPING: Blend in processor with chopping blade the following: 1/2 c. sugar 1 stick "cold" butter 1/2 tsp. cinnamon Process until crumbly. Add 1 cup chopped pecans and mix up in bowl. Sprinkle over top of hot sweet potatoes. Bake at 325 degrees for 20 minutes or until brown. |
