SWEET POTATO SOUFFLE 
3 c. cooked & mashed sweet potatoes
1/2 c. sugar
1/2 c. brown sugar
2 eggs
1 tsp. vanilla
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 c. milk
1/2 stick butter

Combine all ingredients in large mixing bowl. Beat until thoroughly mixed. Pour into buttered baking dish. Heat until hot in microwave (5-8 minutes). Top with topping.

TOPPING:

Blend in processor with chopping blade the following: 1/2 c. sugar 1 stick "cold" butter 1/2 tsp. cinnamon

Process until crumbly. Add 1 cup chopped pecans and mix up in bowl. Sprinkle over top of hot sweet potatoes. Bake at 325 degrees for 20 minutes or until brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
