BANANA PUDDING 
Ripe bananas
1/4 c. corn starch/flour
3 c. nut or tofu milk
1/3 c. honey
2 egg replacers
1 tsp. vanilla
Vanilla wafers (optional)

Mix all ingredients together except wafers and bananas. Thicken mixture in microwave or on stove. Layer bananas, pudding and wafers (if desired) 2 to 3 times.

Servings: 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
