LIGHT BROWN BREAD 
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. baking powder
1/4 tsp. ground nutmeg
1/8 tsp. salt
2 egg whites
1 c. sugar
1 c. mashed ripe banana
1/4 c. cooking oil
1/2 c. currants
Non-stick spray

In another bowl, beat together egg whites, sugar, and bananas. Add oil and mix well. Stir flour mixture into banana mixture. Gently fold in currants. Spray an 8 x 4 x 2 inch loaf pan with non-stick spray. Pour batter into prepared pan. Bake at 350 degrees for 55 to 60 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool on rack thoroughly.

Yield: 1 loaf - 16 servings. 150 calories, 27 grams carbohydrate, 2 grams protein, 3.6 grams fat, 55 milligrams sodium, 0 grams cholesterol.
