APPLE DUMPLINGS
1 c. flour
1/2 tsp. salt
1/3 c. shortening or lard
3 tbsp. cold water
6 tart apples
1 1/2 c. sugar
2 c. water
1 3/4 tsp. cinnamon
1/2 c. butter

Make pastry by blending flour, salt and shortening. When well blended, add cold water. Roll out to 1/8 inch thick. Cut into six 7 inch squares.

Pare and core apples. Place an apple in the center of each square. Fill cavities with a mixture of 1/2 cup sugar and 1 1/2 teaspoons cinnamon. Dot tops with butter. Overlap edges of dough, moisten with water and seal.

Place dumplings in baking dish; do not let edges touch. Make a syrup of 1 cup sugar, 2 cups water, 3 tablespoons butter and 1/4 teaspoon cinnamon. Boil syrup for 3 minutes and pour around dumplings. Bake 40-45 minutes at 425 degrees until crust is brown. After baking is done, spoon syrup over dumplings. Serve with cream or ice cream.
