AUNT CARAMEL'S OATMEAL CAKE 
1 1/2 c. water
1 c. quick cooking oatmeal
1 c. sugar
1 c. brown sugar
2 eggs
1/2 c. oil
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sifted flour
1 tsp. vanilla
1 tsp. baking powder

Pour 1 1/2 cups boiling water over 1 cup oats, let stand until cool.

Sift together 1 teaspoon baking soda, salt, flour and baking powder; set aside.

Mix sugars, eggs and oil. Add flour mixture. Stir well. Add vanilla and oats. Bake in 9x12 inch pan at 350 degrees for 35 minutes.

TOPPING:

1/4 c. evaporated milk
1/4 stick butter
Pinch of salt
1 c. brown sugar

Boil for 1 1/2 minutes. Stir in: 1/2 c. coconut 1/2 c. chopped nuts

Pour over warm cake.
