PECAN DELIGHT PIE 
1/2 c. egg whites
1 c. sugar
1 tbsp. baking powder
3/4 c. crushed crackers
3/4 c. chopped pecans
1 tsp. vanilla

Beat egg whites until frothy, gradually add sugar and baking powder and beat until stiff, but not dry. Fold in crushed crackers, pecans and vanilla.

Grease a deep 9 inch pie pan. Spread mixture in pan and bake at 350 degrees for 30 minutes. Cool and top with whipped cream.
