ZUCCHINI BREAD 
3 c. zucchini, grated and drained
3 eggs
1 1/2 c. sugar
1 c. oil
3 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 c. shredded coconut
1 tsp. baking powder
1 tsp. baking soda

Beat eggs with sugar and oil, add zucchini. Add flour and dry ingredients. Pour into 9x5 inch greased and floured loaf pans. Makes 2 loaves this size or 3 smaller ones. Bake at 325 degrees for 45 minutes.
