CHICKEN (OR BEEF) CURRY 
Chicken parts, cut up
1/2 med. onion, chopped
1/4 tsp. black pepper
1/4 tsp. garlic salt
2 tbsp. curry powder (hot or mild)
1 sm. tomato, cut up
1/4 c. coconut milk (optional)
Oil
Water
2 to 3 potatoes, cut

Brown chicken parts in a small amount of oil after seasoning with salt, pepper and curry powder and onion. Cover with enough water to boil. Add cut up potatoes. Add more curry powder (to taste) and additional seasonings as desired. Add coconut milk and tomatoes. Boil until potatoes are done and the liquid forms a thickened sauce.

Can serve with rice or bread.
