CHICKEN GUMBO 
1/4 c. shortening
1 lg. chicken
2 tbsp. brown sugar
1/4 c. flour
1 bunch celery
1 bunch green onions
1 bell pepper
Salt
2 clove garlic

Cover skillet bottom with 1/4 cup shortening; melt. To that, add 2 tablespoons brown sugar. Melt sugar in grease until almost burnt. Add flour. Stir until almost burnt. Add celery, bell pepper, green onion, salt and garlic. Stir. Add 2 quarts water. Add chicken and cook 1 hour. Serve with rice.
