CHICKEN CASSEROLE | |
4 c. diced chicken breast or 4 cans Swanson white chunk chicken 1 onion, chopped 2 c. celery, diced 2 c. seasoned croutons or Pepperidge Farm stuffing mix 1 c. mayonnaise 1/2 c. milk 1 c. chicken broth 1 tsp. salt 1/2 tsp. pepper 10 oz. shredded Swiss cheese 1 (4 oz.) can sliced & drained mushrooms 1/2-3/4 c. toasted slivered almonds Combine chicken, celery and onion. Saute lightly in 1/2 teaspoon peanut oil. Blend mayonnaise, milk, chicken broth, salt and pepper. In a 9 x 13 inch baking dish layer 1/2 of chicken mixture and 1/2 croutons or stuffing mix. Pour 1/2 blended mixture over top. Repeat with remaining 1/2 of each ingredient. Top with cheese, mushrooms and almonds. Bake in preheated oven at 350 degrees for 30-40 minutes. Serves 8-10. |
