This is the real Cuban Sandwich. The other recipes I saw have some ingredients never used, like mayonnaise.

I was born and have lived in Tampa all my life. I've been eating Cuban sandwiches for over 60 years, so I'm being picky here. There is no substitute for Cuban bread. The order is roast pork (It must be lechon asado, or the sandwich doesn't work.), sweet baked ham, Genoa salami (for an Ybor City style) mild Swiss cheese and dill pickles. All ingredients should be thinly sliced. The ratio is 1 part each meat to a half part cheese. The mustard only goes on the top slice of bread. The sandwich is pressed in a plancha, or your best equivalent, until the cheese melts, never coooked in an oven.
Sweet Cuban bread, similar to challa, and the same ingredients, except salami, are used in a medianoche.
