DOUBLE CHOCOLATE CUPCAKES 
1 1/2 c. all-purpose flour
1/2 c. sugar
1/4 c. sweetened cocoa
1 tsp. baking soda
1/2 tsp. salt (optional)
1/3 c. water
1/2 c. unsweetened orange juice
3 tbsp. vegetable oil
1 tbsp. vinegar
1 tsp. vanilla extract
1/3 c. semi-sweet miniature chocolate morsels
1 tsp. powdered sugar

Combine flour, sugar, cocoa, baking soda, and salt in a medium bowl. Make a well in the center of mixture. Add water and next 4 ingredients to dry ingredients. Stir just until batter is moistened. Fold in chocolate morsels. Spoon into foil or paper-lined muffin pans, filling 2/3 full.

Bake at 375 degrees for 12 minutes or until a wooden pick inserted in center comes out clean. Remove from pan immediately; cool on a wire rack. Sprinkle with powdered sugar. Yield: 1 dozen (about 163 calories per cupcake).
