ZUCCHINI SPINACH LASAGNE 
1 c. chopped onion
1/2 c. chopped green pepper
16 oz. can stewed tomatoes, drained
2 zucchini, sliced
8 oz. can tomato sauce
1 tsp. salt
1/4 tsp. sweet basil
1/4 tsp. oregano
9 sesame lasagne noodles
1 c. cooked spinach
Cashew Pimiento "Cheese" Sauce, uncooked

Simmer onion and green pepper in a small amount of water until tender. Add next 6 ingredients and simmer for 20 minutes. Alternate layers of tomato sauce, noodles (cooked or uncooked), spinach, and "Cheese" Sauce in a large baking dish. Bake at 350 degrees Fahrenheit for 45 minutes. Serves 8-10.

VARIATIONS:

Substitute kale or other greens for spinach.
