CHICKEN AND RICE 
6 chicken thighs (remove skin)
1 can tomato sauce
1 c. UNCLE BEN'S® converted rice
1 lg. onion
2 tbsp. butter
Garlic salt & pepper to taste

In a large pot, saute chicken and onion in butter over low heat, tightly covered, until onion is clear. Add can of tomato sauce plus 1 1/2 cans of water. Stir in cup of rice. Cover and simmer until rice is cooked (20-30 minutes). Sprinkle with Parmesan cheese and serve with a tossed salad and warm rolls.
