MAMA CITA'S PAELLA 
2 lbs. UNCLE BEN'S® rice
1 1/2 doz. little neck clams
2 lbs. sm. shrimp
2 sm. pork chops, cut up
8 to 10 pieces chicken
3 lg. soft tomatoes
1 head of garlic (yes the whole head)
Saffron
Oil

Wash and boil clams, set aside. Skin tomatoes, cut into small pieces, set aside. Chop fine the whole head of garlic.

In a deep, large fry pan, brown garlic then fry chicken slowly. When chicken is almost done, add pork and when pork is almost done add shrimp and tomatoes. Let this mixture cook for a while then add uncooked rice. Let the uncooked rice fry for awhile in the pan (about 3 minutes) then add water, clams, salt, pepper and saffron. Cook for about 1/2 hour.

When cooked, do not remove from pan but put pan with rice mixture in a large brown paper bag until ready to serve. (NOTE: Measure the 2 pounds of rice in a multi-cup measuring cup or a bowl that the rice will fit into perfectly. You need to do this in order to know how much water to use. For example if the rice fills a small bowl, use that bowl to measure the water. You need 3 parts of water to 1 part rice.)
