TORTELLINI SALAD 
1 1/2 lbs. tortellini, frozen or fresh
6 qts. water
1 tbsp. olive oil

Water to boil, tortellini in for 5-7 minutes. Drain and refresh. Set aside.

Combine the following slowly in food processor:

1/3 c. red wine vinegar
1 1/2 tsp. Dijon mustard
Salt, pepper
1/3 c. olive oil
1 c. vegetable oil
1 tbsp. fresh parsley, fresh dill
2 tsp. basil

In separate bowl, combine:

4 oz. prosciutto ham, cut thin sliced
2 green pepper, thin strips
1 purple onion, thin strips
1 1/2 tbsp. Parmesan cheese

Combine dressing and ham mixture, toss with tortellini and chill for at least one hour before serving.
