CHEESE - CAULIFLOWER SCALLOP 
1 med. cauliflower or 1 pkg. frozen cauliflower, cooked
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
1/2 c. cheese, grated
Dash of paprika

Separate cauliflower; cook in a small amount of water until tender. Arrange in casserole. Melt butter in saucepan; blend in flour, salt, pepper and milk. Cook over low heat until mixture is smooth and coats spoon. Add cheese, stir until melted. Pour over casserole. Sprinkle paprika. Yield 5 servings.
