MAPLE NUT CINNAMON ROLLS
1 pkg. dry yeast
1/4 c. warm water
1 c. quick cooking rolled oats
3/4 c. hot scalded milk
1/2 c. shortening
1/3 c. brown sugar
1 1/2 tsp. salt
2 eggs
3 1/2 - 4 c. flour
1/4 c. butter
1/2 c. maple syrup
1/4 c. brown sugar
1 tbsp. water
2/3 c. chopped walnuts

Soften yeast in 1/4 cup warm water. Combine in a mixing bowl the oats, hot scalded milk, shortening, brown sugar and salt. Cool to lukewarm and blend in eggs and the yeast. Gradually add flour.

Mix well, cover and let rise in warm place until doubled in size, about 1 1/2 hours. Melt 1/4 cup butter in 13"x9" pan and add maple syrup, brown sugar, water and chopped walnuts.

Roll out dough to 24"x12" rectangle. Brush with melted butter. Sprinkle with 2/3 cup packed brown sugar and 1 teaspoon cinnamon. Roll up, cut in 1" slices and place in pan. Let rise 1 hour or until doubled. Bake at 350 degrees for 30 minutes. Cool 1 minute and invert onto serving tray.
